Cafés in Iloilo: Aldea's Cafe | How to make Sans Rival?

It is undeniable that it continues to improve over the years
and along with these developments, many business venture also came about.

Have you noticed that there have been countless coffee shops all around the city?

Aldea’s Coffee Bar and Restaurant - located along Festive Walk Mega World. 
It serves a variety of Frappe, Tea, Fruit Beverage, Cakes, Pastries
and many more. The restaurant’s vibe is soothing.
A very good place to release stress, study,
catch-up with friends or have a date with that special someone.


One of their treats is called Choco Sans Rival - a Filipino Classic





















This dessert rooted from the
French Cake called Dacquoise. 

If you don’t have
time to go out and
indulge yourself in
this dessert, we will
show you how easy
it is to make
Sans Rival in
the comforts of
your own home.

The ingredients are simple
and easy to find:




Ingredients with Love -
[] 3 egg whites
[] 2/3 cup Ground Nuts (here I used Almond Flour or Ground Almonds)
   -You may use ground cashews, pistachios, hazelnuts, pecans etc.
[] 1 cup powdered sugar
   -You may leave this out if you don't have any on hand (see brown sugar)
[] 1/3 cup brown sugar
   -If you don't have powdered sugar, you can use just 1/2 cup regular sugar
 to make the meringue
[] 1/3 cup cake flour or AP flour will do
[] cocoa powder, whole cashews and salt optional

Procedure:
Sift all the dry ingredients together
If you are not using powdered sugar, don't sift the regular sugar
We will combine all of it to the egg whites to make the meringue

Beat the egg whites until foamy or very frothy
Gradually add (by Tablespoon) regular sugar
Beat until glossy and holds a semi-stiff peak when you lift the beater
(You may use an electric mixer)

Fold the egg whites gently to the dry ingredients
Once combined, you may pour it in a cake pan, baking sheet
or do what I did. Piping the batter to shape them.

Bake in a preheated 300F /150C oven until firm and golden brown
about 45-50 minutes just keep an eye on it.

Freeze to cool cookies before icing with the frosting of your choice.

We made a Mini Sans Rival Cake with this recipe
but you can exercise many options.

PoroSnax Silvanas (Cookies) - A Frozen Treat

FUN FACT ABOUT ME #8: I just had my bangs for the first time in 23 Years.

All my life, I’ve been intrigued on how to make French Macarons. I have looked up several recipes, tips and tricks and although I am really eager to try and make them, I just can’t find any almond meal in my location..



In connection to that, I am also fascinated with Sans Rival and Silvanas because of their wonderful flavor and unique texture. Funny, because I have already made my first ever Sans Rival (which I am planning to improve on when I bake my next) and the recipe for Sans Rival, Silvana Cookies and Macarons are almost (take note: almost) similar, yet instead of almond meal, they call for ground cashews. Yum!

 With that said, yes I admit I became addicted to making Silvanas. At first, I tried using the macarons technique yet it was a fail. (Hey, nobody gets it right the FIRST time; so I’ve been told!) I didn’t believe that at first. I mean, the flavor and texture was fine but the appearance eeh not much.



I did four tries until I got it just right BUT (yes but) I wanted to make more, something beyond, something different with these classics so… I take my buttercream, made some cookie icing and voila. Poro-themed Silvana Cookies.




If you don’t know what a Poro is, here’s a quick preview: 


I call them PoroSnax because they are Poros we can snack on but the real PoroSnax look like these:

Therefore, I conclude since Poros eat PoroSnax; poof they became le PoroSnax themselves! *laughs* I want to be a Poro too... They’re so cute and fluffy just look at em.


Ps: if you are one of those obsessed with League of Legends too then my apologies for not placing Poro Ears slash Horn because I accidentally grounded ALL MY CASHEWS. Noooo!

Pusheen as a Lady Bug?

I want to try something new today and lay off the sweets.
I actually like to draw something on a pizza and I thought, is that even possible?
So, I looked up online and stumbled over Domenico Crolla and his stunning pizza portraits.  I'm like "are you sure?" but there's no stopping me, let's do something simple like my favorite character in the world, Pusheen!



I made a deep dish pizza before with my 2 year old nephew (that was yum!)  



I gotta admit I lacked plans and practice with this Pusheen portrait thingy
but I'm really hyped on making another one next time. Enjoy!

If you're wondering what I did to outline Pusheen, it's actually a white cheese spread that I colored brown. :D You can explore on your options. 


My apologies for not achieving that golden crust, you're the boss of your own pizza portrait, just let it stay in the oven a few more minutes till you achieve desired crust.

DotA 2 Themed Doughnuts

If you’ve been tuning in to my YouTube Channel, then you’ve already noticed.

I'm sure you'd rather be a doughnut to feed those heroes giving them something to nom on rather than feeding them with your own player (like what I usually do; cos I'm such a noob :/) The first option is a win win if you ask me. :))

Been playing DotA since it came out then I switched to League but recently I've been playing a lot of DotA 2 so every time that loading screen comes up (obviously I didn't buy any fancy loading screens yet; Ha!) I think of a sweet treat so...

I'm feeling more gamey lately so I came up with this:

They are already good on its own and today I dipped them in some marshmallow glaze. 


You can also fill them because these are hole less donuts, I wouldn't want to waste that dough but donut holes are good too. If you're a donut bites kind of person. :)




The donut itself is not that sweet and so is the glaze. If you want it on the sweeter side, add some powdered sugar in your marshmallow mixture while on the stove.

You are what you eat... (I am a Choco Mucho Angel "slash that" Monster Cake)

FUN FACT ABOUT ME #5: I Love Dark Chocolates! “Who doesn’t?” mehe :/


Did you know that Choco Mucho (a product of the famous; REBISCO) has different varieties now?

YES! Just take a look at these Choco Mucho POP Bites (it comes with a dark chocolate flavor) 


I know I got my hand on Choco Mucho from its first ever Milk Chocolate bar with delicious wafers and caramel and stuff, then they released different flavors and Dark Chocolate – is a personal favorite of mine. What’s yours?
From a humble chocolate bar, to mini chocolate balls now to top it off, I guess just like (Jack ‘n Jill’s) Cream-O, it released its new product which is the Choco Mucho Cookie Sandwich with thick chocolate filling; and they’re not kidding when they say thick they mean thick. From you first bite bursts its chocolatey flavor. I sure hope they release something dark chocolate soon.




Won’t you agree with me that we are Choco Mucho too? We may come in different shapes and sizes, go around with different colors and personalities but we are still one by heart. <3 A Chocolate Heart. Hihi

You are what you eat... (I am a chocolate chipped cookie)

FUN FACT ABOUT ME #4: I never used a rolling pin.

Did you know that chocolate chipped cookies were created by accident?

"or so that's what I heard."

   It's supposed to be a take on a chocolate cookie but the baker mixed in the choco chips in the anticipation that they will melt in the oven but they didn't.

  Simple chocolate chip cookies aren't complex.

" Take that from someone who's never used a rolling pin!!"

Well for one, they don't need any rolling anyway or chilling or waiting unless they're already in the oven. meh :/

Achieving  the perfect cookie requires:

1) Room Temperature Ingredients

2) not over beating the butter "if it's already well incorporated with the sugar... STOP!"

3) Scoop the dough in equal sized to bake even

Now, with all the power vested in me I will transform thy reader into a cookie! haha

shoo go ahead. make , eat and be a chocolate chipped cookie.

You are what you eat... (I am a deep dish Pizza)

FUN FACT ABOUT ME #3: I am not the person inside my head.
People perceive me as someone I'm not

"or... I perceive myself as someone else!"

   First week of classes is almost up for the second semester of 2014; it's as if I still care since I'm no longer a student but what the heck.

"Secretly, I wish I still was."

   What's next for me? I'm taking a journey to the unknown.

   Early this morning I found myself sitting on a bus thriving it's way to the province. Hey. boredom got the best of me and decided to linger sight on the other passengers. Mid way, the doors opened for a student bringing this huge knapsack, fare on one hand and a packet of biscuit in the other. She must've been out of herself when she decided to hand over her biscuit to the conductor thinking she had given him her fare.

" *Me preventing myself to burst out a huge laughter..."

  2 minutes passed until they both realized what happened.

   Half an hour until I get to my destination and the conductor asked me for my ticket.
He had charged me a student's fare and boy I love the discount. Apparently, he still perceives me as a student.

"And I thought I did a great job with my make up!"

This situation has brought me unto making this huge delight.


I am a three inch deep dish Filipino Style Pizza. Composed of different layers and all these lovely toppers. Cheese, Tomatoes, Onions, Garlic, Meat, Beef, Milk, and Butter. Maybe perceived to be this typical pizza but bursts with different personalities.
