Cafés in Iloilo: Cafe Diem | How to make NO BAKE Smore in a Core?

Feed your Spirit: [John 6:35]
Then Jesus declared, "I am the bread of life.
Whoever comes to me will never go hungry,
and whoever believes in me will never be thirsty.”

Iloilo City, Philippines is the “City of Love”
It is undeniable that it continues to improve
over the years and along with these developments,
many business ventures also came about.

Have you noticed that there have been
countless coffee shops all around the city?

Cafe Diem - If you are a true coffee lover
For sure by now, you know that the name of this
coffee shop is a play on the Latin Words
"Carpe Diem" which means "Seize the day!"

Even from the vintage-like facade of the cafe
You'll see a big statement above saying
"Seize the day with a cup or two." and tell me if you wouldn't be enticed.

The Cafe's main branch is apparently in Miag-ao, Iloilo, and truth be told,
I would not have found out about them if they haven't opened a branch here in the City.

The just celebrated their 2nd anniversary last December 2016 after they have
opened their city branch a month before that. Or so I heard.

I was not surprised to see many customers inside and despite all the laptops
set up, I still see a group of friends talking to each other instead of looking
at their gadgets.

Truly, this place is engaging. I was just craving for a taste of Ice Cream that day so I asked if their Smore in a Core is available with a side of Grilled PB & J Ala Mode.

The Smore in a Core is a classic chocolate mug cake. Mug cakes, I'm not really a fan of. I feel like on the Ice Cream saves the day. Anyway, I was inspired to make a No-Bake Version of this. (Procedure Here)

Ingredients with Love: (NO BAKE)
[] Graham Crackers (Crushed or Whole)
[] Chocolate Melts (milk optional)
[] Marshmallows
[] Ice Cream

Procedure:
-Choose a desired container
-Layer with Graham Crackers
-Melted Chocolate
-Soft and Chewy Marshmallows

How to melt the chocolate?
-Heat up your 1/2 cup milk and pour it over
1/2 cup chopped chocolates
-Stir this mixture if chocolates have softened
-If not, put over low heat and stir until fully dissolved

If your using Chocolate Melts
-Slice into small pieces and put over low heat
while continuing to stir to avoid chocolate burns
-or microwave

How to soften marshmallows?
-Place in a heat proof container (with a generous brushing of oil)
If there is one thing I learned about mallows is that they are so
sticky to the core.
-Put over low heat or in the oven, mix well

I had so much fun making this one and honestly, it is so easy and tastes so good too.

ENJOY!

Cafés in Iloilo: BnB Charcoal Burger | How to make Charcoal Burger?

Feed your Spirit: [John 6:35]
Then Jesus declared, "I am the bread of life.
Whoever comes to me will never go hungry,
and whoever believes in me will never be thirsty.”

Iloilo City, Philippines is the “City of Love”
It is undeniable that it continues to improve
over the years and along with these developments,
many business venture also came about.

BnB Charcoal Burger - Located near
Iloilo Science and Technology University.
Prides itself in serving a variety of its
unique burger infused with bamboo charcoal.
Hence, the charcoal burger.

BnB means Burgers and Beers.

The place can easily be modified to match the
seasons mood, and because we went there on
a February you can obviously tell its
overflowing with love. <3

The burger may be a descedant of Burger King's
Kuro Burger in Japan, the BnB Chain
still has many distinct qualities.

Unlike modern fast food chains, BnB's vibe
is close to nature allowing you to breath
fresh air, relax with the sweet music,
and mingle with friends.

Since the chain opens until 9pm,
Many customers already got the
chance to dine under the stars.

If you're craving for a charcoal burger breakfast
Here's how you can make your own, at home.

Ingredients with Love:
[] 1/2 cup warm milk or water
(dip your finger should feel close to body temperature)
[] 1/2 tsp sugar
[] 2.25 tsp yeast
[] 1 small egg or 1/2 large beaten egg
[] 1.5 Tbsp melted butter
[] 1&1/2 cups bread flour or AP flour will do
[] drop of concentrated squid ink or food dye

Procedure:
Pour water, sugar and yeast into a bowl
Let proof for about 5 minutes or until poofy
Add half of the flour, salt beaten egg, melted butter and mix
Add the rest of the flour mix and dab in the food color
knead in the color on a work surface for 5-8 minutes until
dough is smooth and elastic. (not dry)
Oil a bowl and place in the dough
Make sure to smother the dough in oil as well
Let it rise for 1 hour then take it out and punch it down
divide it into balls and place on a wax paper for final rise (30 minutes)
Brush on some egg wash (beaten egg + 1T milk or water)
and sprinkle sesame seeds
Bake at 375 F for 20-25 minutes

I must say, we made quite a replica of the burger,
although we didn't make it using bamboo charcoal,
feel free to do so on your own.

We also couldn't get our hands on pure squid ink
so we had to resort to food dye. Anyways, here is a step by step
tutorial on how to make this simple bun at home. Also, a
short feature of the BnB Charcoal Burger Chain.

Enjoy!

Feed your Spirit: [John 6:35] Then Jesus declared, "I am the bread of life.
Whoever comes to me will never go hungry, and whoever believes in me
will never be thirsty.”

Iloilo City, Philippines is the “City of Love”
It is undeniable that it continues to improve over the years
and along with these developments, many business venture also came about.

Have you noticed that there have been countless coffee shops all around the city?

Aldea’s Coffee Bar and Restaurant - located along Festive Walk Mega World.
It serves a variety of Frappe, Tea, Fruit Beverage, Cakes, Pastries
and many more. The restaurant’s vibe is soothing.
A very good place to release stress, study,
catch-up with friends or have a date with that special someone.

One of their treats is called Choco Sans Rival - a Filipino Classic

This dessert rooted from the
French Cake called Dacquoise.

If you don’t have
time to go out and
indulge yourself in
this dessert, we will
show you how easy
it is to make
Sans Rival in
the comforts of
your own home.

The ingredients are simple
and easy to find:

Ingredients with Love -
[] 3 egg whites
[] 2/3 cup Ground Nuts (here I used Almond Flour or Ground Almonds)
-You may use ground cashews, pistachios, hazelnuts, pecans etc.
[] 1 cup powdered sugar
-You may leave this out if you don't have any on hand (see brown sugar)
[] 1/3 cup brown sugar
-If you don't have powdered sugar, you can use just 1/2 cup regular sugar
 to make the meringue
[] 1/3 cup cake flour or AP flour will do
[] cocoa powder, whole cashews and salt optional

Procedure:
Sift all the dry ingredients together
If you are not using powdered sugar, don't sift the regular sugar
We will combine all of it to the egg whites to make the meringue

Beat the egg whites until foamy or very frothy
Gradually add (by Tablespoon) regular sugar
Beat until glossy and holds a semi-stiff peak when you lift the beater
(You may use an electric mixer)

Fold the egg whites gently to the dry ingredients
Once combined, you may pour it in a cake pan, baking sheet
or do what I did. Piping the batter to shape them.

Bake in a preheated 300F /150C oven until firm and golden brown
about 45-50 minutes just keep an eye on it.

Freeze to cool cookies before icing with the frosting of your choice.

We made a Mini Sans Rival Cake with this recipe
but you can exercise many options.

Here is a video of the step-by-step
instructions and a view of Aldea’s Coffee Bar and Restaurant.

Enjoy!
